: pumpkin bread
i wanted to do sth with the pumpkin aside from scones again so i subsequently managed to dig up a pumpkin bread recipe from a teaching resource website of all places. it was also the only aussie based recipe i could find becos it appears that pumpkin is primarily a US recipe staple. i've only tried bread making once before with the hot cross bun recipe taken from a SMH liftout (good essential i think it was) which turned out passable in terms of taste but was def lacking in skill on my part.
the instructions were easy and it makes 1 loaf (less wastage in the event of total diasaster). based on my previous adventure, i also nabbed some other useful tips from baking sites. i was still apprehensive throughout the whole process until the time i put the dough in the oven becos 1) theoretically the recipe is fine and it came together alright but a teaching worksheet is still random, 2) it was only my 2nd time baking bread from scratch.
so how did it turn out? absolutely delicious. the pumpkin gives it a lovely golden colour. it's a dense loaf (i subbed half wholemeal flour) but the moisture is also just right and not too dry. it goes perfectly with a creamy soup (i pureed the leftover pumpkin into a soup i sorta totally winged)
